Berry Garden Fizz – a fruity mocktail variation

This non-alcoholic cocktail brings garden aromas and berry freshness to the glass. Raspberries, lemon juice, a hint of rosemary, and sparkling soda make it a treat for the nose and palate. Perfect for garden parties, brunches, or as an elegant aperitif – completely alcohol-free.

Ingredients

4 cl raspberry juice or blended raspberries (finely strained)
2 cl freshly squeezed lemon juice
2 cl elderflower syrup or simple syrup
1 sprig of fresh rosemary (optional: thyme for a more tart flavor)
2 cl aquafaba or 1 fresh egg white (for the fizz)
Soda water to top up

Bar Equipment

Cocktail Shaker
Strainer (fine mesh for fresh puree)
Long drink glass or coupe
Ice cubes

Preparation

Lightly muddle the rosemary (clap between your hands) and add it to the shaker with the remaining ingredients, except for the soda water. Shake vigorously without ice (dry shake), then add ice cubes and shake again for 20-30 seconds.

Strain the mixture through a sieve into a glass filled with fresh ice. Top up with soda water and stir gently to avoid breaking the foam.

Garnish

Decorate with a sprig of rosemary, fresh berries, or a dried orange slice.

Variation Tip

If you like, replace the raspberry juice with currant or pomegranate juice. Passion fruit also works well for a tropical flavor.
